• Trio reopens...
Trio opens its doors after its yearly two week break and we are ready with new energy, some improvements like we are redoing or restrooms and some new paintings. Off course air conditioned as well for the summer heat. We have some new dishes as well like crispy Soft shell Crab with green asparagus and spicy peanut sauce, Artichoke soup with toasted pine nuts, Tomato risotto with Caribbean octopus and black olives, Garlic glazed Sea Bass Piedmont style with spinach and watercress salad with pecans, Rosemary grilled chicken breast with cauliflower & glazed carrots served with pea raviolis and sherry sauce. New also for this season is that we have many of our dishes available in smaller tasting sizes. A perfect way to be able to try more different dishes! Trio proudly participates in this very important culinary event representing our beloved Puerto Vallarta and Mexico together with the Puerto Vallarta Visitors bureau and the restaurant association.
Chef Bernhard Guth will do dishes like crabmeat on guacamole and jicama, smoked chipotlle sauce and crisp tortilla salad, Yucatan style spiced fish fillet on chile habanero mashed plantain and lime ginger sauce, baby goat braised on its own juices with corn kernels and huitlacoche. Dishes reflecting the culinary tradition of Mexico and its present, with influences from all over the world creating a very unique style.
• Art at Trio
Maria Christiina Mercado is a well known muralist and painter originally from Argentina who has been living for over 8 years in Puerto Vallarta. We kindly asked her to do some work for us at our ceiling on the ground floor in the restaurant, where she managed to incorporate earthy colors and simplistic tones best to be appreciated at night when the subtle ambience light reflects patterns of brushes and ancient Mediterranean terracotta colors.
• Wines
For the warm summer nights a Verdelecho wine from Hunter Valley in Australia is the right choice. Abundant in tropical fruit flavors, Verdelho was originally used in Portugal to make Madeira. Our Verdelho is pale lemon in colour, with spice aromas and a hint of green herbs and nettle. The palate is rich and fleshy with a crisp finish. As an aperitif with tasty cheese and olives.
