A fresh and beautiful evening was the perfect setting naturally framing the presentation and degustation of the new menu and concept at the prestigious Vista Grill Restaurant Lounge; one of the most spectacular sites in Puerto Vallarta’sRomantic Zone; originally named Señor Chico’s, this venue keeps pleasantly surprising every one of its guests since 1983.
A new year begins and the challenge to improve and stand out in the select universe of magnificent dining options in Puerto Vallarta; Vista Grill, headed by its owner, Alberto Pérez takes the challenge with a daring and delicious encounter with the original and essential ingredients that have made Mexican haute cuisine a global cultural legacy.
One of Vista Grill’s keys to success is that in the midst of a family gastronomic tradition nothing remains unchanged, Vista Grill always features something to surprise and amaze its visitors with; this time it is their decision to fully immerse into a concept of Mexican haute cuisine, created and developed mainly by its young, though well-experienced Vallartense chef
Felipe Hernández, who in a rather short time has established himself as the chef that projects and shares with his diners a culinary personality that stands out for its contemporary creativity, filled with colors, and of course, exquisite.

“Oven roasted red snapper with Veracruzana sauce and white rice”
“Mahi mahi glazed with red chile and piloncillo, mexican ric, black bean and jalapeño sauce, creme fraiche with chives”
“Pork tenderloin filled with cuitlacoche and blue cheese, chile pasilla and tequila sauce, pumpkin and chayote puree, mushrooms, green beans and onion”
“Chile encrusted salmon, tamarind essence, napolean of chorizo and peppers”
“Beef tenderloin, grilled vegetables, corn and, potato cakes ten chiles sauce over hoja santa”
“Chilean sea bass filet with macadamia, bok choy, lemongrass and coconut emulsion”
“Shrimps, pumpkin and fava beans risotto, crab bisque and tomatoes”
“Local pacific lobster roasted with guajillo, garlic and fine herbs butter, creamy rice with chorizo and mushroom”
This new culinary adventure —complemented with an extraordinary selection of wines―, has required a deep relationship with the Mexican ingredients that by themselves or combined offering us the richest opportunity to experience the great diversity of flavors, aromas and textures uncovering, on one side the roots of our cuisine, and on the other, showcasing the gay and colorful warmth of a people who live and share their flavors to never be forgotten.
